Pancake Day - Strawberry Cheesecake Oatein Pancakes


Looking for a delicious high protein pancake recipe to make pancake day a real treat? Look no further.

These super simple strawberry pancakes are the perfect way to start your pancake day on the right foot, packed with low-GI energy, the extra oats from our low sugar protein flapjacks keeps the texture interesting! 

Ingredients:

  • 135g/4¾oz plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp caster sugar
  • 130ml/4½fl oz milk
  • 1 large egg, lightly beaten
  • 2 tbsp melted butter (allowed to cool slightly), plus extra for cooking
  • 1 tbsp rolled oats
  • 70g Oatein strawberry cheese cake flapjack
  • 4 strawberries
  • 50g White cooking chocolate

Method:

Sift all your dry ingredients into a bowl (the flour, baking powder, salt and caster sugar). To your dry sifted ingredients add the rolled oats and crumble in the flapjack. In a separate bowl, lightly whisk together the milk and egg, then whisk in the melted butter.

Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Do not over mix the mixture, once smooth let the batter stand for a few minutes.

Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter. Wait until the top of the pancake begins to bubble, then turn it over using a spatula and cook until both sides are golden brown and the pancake has risen to about 1cm thick.

Repeat thus process until all the batter is used up. Chop your strawberries thinly and garnish.

(For a treat: add white chocolate!
Place chopped white chocolate in a microwave-safe bowl; microwave in 30-second intervals, stirring between each, until melted.)
